Best Cauliflower Pizza Crust EVER

Prep: 15 Mins

Cook Time: 15-20 mins

Makes: One Big Pizza or few smaller ones

Preheat Oven - 425*

Ingredients

2.5 Cups Grated or Riced Cauliflower (can use food processor or cheese grater.  I used Trader Joes frozen Riced Cauliflower)

1/2 tsp dried Basil (I don't measure just shake)

1/2 tsp dried Oregano (I don't measure just shake)

1/2 tsp Garlic Powder (I don't measure just shake)

1/4 c shredded Parmasean Cheese (or whatever italian cheese you want to use)

1/4 c Mozzarella Cheese

pinch of salt (i omitted but will use next time)

1 egg Slightly Beaten

Directions

Preheat Oven to 425 (if using convection 400)

Place Cauliflower in a microwave safe bowl and cook for 4-6 mins.  (I used frozen and that is all I needed) Stir to cool off.

Place Cauliflower in a fine mesh strainer (if you don't have one you can line a strainer with paper towels place and place cauliflower in it, you could also use a clean dry tea towel and press down to absorb more liquid)

Use a rubber scraper to press cauliflower against the strainer to remove the excess liquid.  (this step is vital to the crust turning out correctly, it will seem like there isn't extra liquid but there is)

Place Cauliflower in a bowl and fluff with a fork.

Add in the Basil, Oregano, Garlic, Parmesan and Mozzarella.  Mix well and taste.  Add in the pinch of salt if needed

Next beat egg in separate container and then add to mixture and blend completely.

Press mixture out onto a baking sheet lined with parchment paper an sprayed with non stick spray(I used a pizza stone and it didn't stick horrible but next time I will probably put parchment paper underneath it)

Press out to about 1/4 of an inch or slightly thicker.  Keep mixture tight together and in an even layer.  Again you can bake one big one or a few smaller ones.

Remove from the oven and top with desired toppings and return to oven to cook veggies and melt cheese!  Let cool for a few minutes and then slice and serve!!!
